WWALW // June 19th - 25th 2017

Over the last week not only has the UK been in a heatwave reaching temperatures I would much prefer on a sunny beach with a glass of wine in hand instead of getting the kids to bed and getting out to work. It did mean out dinners were somewhat unplanned, a bit thrown together and in some cases not really dinner at all.

Monday // The heat was on Monday here in South Croydon. I had 3 lots of food in the fridge which all needed using by the same day. This meant that I needed to use my Monday (day at home!) to get ahead and avoid throwing away food. I got a curry on the go ready to cool and be eaten later in the week - then to avoid standing in the kitchen cooking as the heat rose I pulled out the Winter staple - the slow cooker. Yes the slow cooker - who said its just for stews when its cold outside. I chopped up peppers, carrots and some belly pork - added some brown sugar, soy sauce, hoi sin and some more seasoning. Left to cook and simmer away - Once home I thickened up the pork with some corn flour. It was nice to steam some rice and sit down to such a yummy dinner. The boys enjoyed chicken nuggets with their cousin in the garden at my mums house earlier in the evening.

Tuesday // This is another quick dish of mine - which the husband loves. Pan - fried gnocchi with spinach. I add a little milk to the pan which the gnocchi soaks up. Once the gnocchi and spinach were cooked, place basa fillets on top and lower the pan. Cover with the lid and let the fish steam. This is was a nice light dish in the heat. 

Wednesday // Time to try out that curry - which was so simple to put together on Monday. I used boneless and skinless chicken thighs fillets (cheaper and more flavour than the chicken breasts), with some tandoori seasoning, curry seasoning and some coconut yoghurt. Cooked through and left to simmer. 

Thursday // This curry was so good it was dinner tonight as well. Which was a good thing, as I had to do some work from home in the evening. A nice quick dinner was just what I needed.

Friday // After the busy week we both had we were not in mood for anything fancy, the fridge was not full of wonders and we were hungry. This caused for a student classic - bacon and pasta with cheese. I also added the loan leek left in the bottom of the fridge drawer and the bag of spinach which had seen better days - but once it has been wilted you wouldn't know any different. We keep it classy.

Saturday // Busy day for the Edwards family. It included opticians, visits to the bank, kung fu lessons, swimming lessons and my sister baby shower. A bit of divide and conquer between us and we made it to the end. The boys had eaten lamb burgers and chips - which tasted so good they finished the lot. By the time they were in bed my energy was lacking - my dinner (as the husband had gone out to meet some friends) I had a slice of baby shower cake and glass of wine. Keeping the real life eating alive.

Sunday // We took a stroll down the road near where we live to vist the Croydon Food Fest. There was stalls, music and cocktails! It was super busy and was great to see so many different ages of people all out together sampling some fantastic local foods. The boys ate these massive smoked sausage rolls and we got some curry goat, rice and peas and plantain!! yum. Later at home the boys ate fish finger sandwiches before having a bath. Me, well I ate a bowl of cereal and had a glass of wine - all the while watching Ed Sheeran rock the pyramid stage at Glastonbury.

Overall it was a bit of a mixed bag of dinners but some weeks are like that.. We made it to the end.
