Kitchen Adventures // Peanut Butter Biscuits

When I asked the husband what he fancied me baking this weekend - his response, peanut butter cookies. He loves these. They are quick to whip up and simple to make - plus you can use up whatever you have on hand (chocolate drops, coconut, sultanas and I have even chopped up left over quality street or roses and thrown them into the mix!)

My basic recipe is :

125g butter (or I use stork!)
150g caster sugar (but you can easily experiment with other types of sugar!)
1 medium egg
150g plain flour
1/2 tsp baking powder
1/2  tsp salt

then add in what you fancy - today was a jar of peanut butter with chocolate drops.

And just put it all in a bowl and mix until combined. Splodge onto a baking tray and bake until golden and soft (about 12/15 mins but keep an eye on them!) at about 170c fan (higher if not a fan oven)

And job done, good with a cuppa! But I'm also thinking these would be good crushed up in a sundae glass, with some vanilla ice cream and banana for good measure.
